Coconut Oil from Liquid to Solid

The photo shows coconut oil in various stages between liquid and solid. At the far left the oil is completely liquid and water clear. In the next bottle to the right the oil is somewhat cooler and there are small bits of solid coconut oil throughout causing it to look cloudy. The third bottle from the left has been allowed to cool very slowly, undisturbed. The oil has started to form spherical, snowflake-like, crystals. It is difficult to see the detail in the photo although you can see round outlines at the bottom of the bottle. These crystal-like structures have an almost iridescent appearance. The last bottle on the right shows the oil completely solidified.
